French Cut Green Beans and Lentils with White Wine

Great dish to get a complete set of vitamins, protein and iron all in one meal.  You can serve this dish hot or cold.

In a separate stock pot, boil 1 cup of green lentils for about 20 minutes until tender, but not falling apart.. Strain and set aside..

In a saute pan, saute french cut green beans in olive oil, salt, black pepper, smoked paprika at medium heat...  When the beans are tender all of the way through, add some chopped garlic or shallots (optional) and sweat for a few minutes.. Then add about 1/2 cup of your favorite dry white wine and juice half a lemon.. Let it reduce down until the alcohol is evaporated.  Add the lentils to the green beans and toss together.  Top with more lemon and or yogurt..

Optional tweaks:  Toasted almonds or pine nuts would work well with this dish. Also, you could make it a heavier dish by adding butter with the white wine.
