Soak Mayocoba (peruvian/canary) and Black beans in cold water overnight. (1/2 cup each).
Seasoning Prep: re-hydrate 2 of your favorite dried chiles in water. Discard the seeds and stems. Add 1/2 a cup of whole/crushed or pureed tomatoes. Puree the peppers and tomatoes together in a blender.. Add a touch of lime, salt, black pepper, paprika, (smoked paprika) chili powder (garlic,onion powder, dried chile powder, cumin, oregano) to the sauce.
Brown Rice: In a saucepan, sautee the rice (1 cup) with diced onions and garlic until browned.. Add 3/4 of a cup water or chicken broth and the tomato/pepper sauce to the rice. Then add the rehydrated beans. Simmer and cover until liquid is absorbed.
Optional tweaks: You could add toasted sliced almonds or your favorite dried fruit to go along with this nutty flavored dish. You could also finish with your favorite hot sauce or crema fresca.
