Yucca fries are a great alternative to frying potatoes.. Their texture is similar if not better and the taste is pretty neutral. Yucca is known for benefiting the digestive system and doesn't soak up as much oil as potatoes so overall a great healthy alternative..
Instructions
Peel Yucca and split them in half so you have two long tubes. Boil them for about 15/20 minutes in salt water until fork tender, but not falling apart. Remove from the water and let the yucca cool down.
When cooled, cut the yucca into thick "fries" . The goal is to have crispy outside with a soft moist middle.
Prep your favorite frying oil (canola) and once the temp has reached a medium hot, throw in your yucca one at a time.. Don't overcrowd the pot and be sure to flip around some of the fries.
Once golden brown or crispy to your liking, remove the yucca fries and place them on a cooling rack. Top with kosher salt, chilli powder and cilantro.
Yucca fries can pair well with a chipotle mayo, a mojo sauce (cilantro, butter, garlic, oil ) or some kind of cilantro-mayo concoction..
